Banh Chao | Banh Xeo

Banh Chao also known as Banh Xeo: Our Southeast Asian crispy crepe known for its golden, sizzling edges and savory shrimp + pork + bean sprout filling. Banh Chao was one of my favorites growing up, especially when my Look Yay made it 🤤

There’s a true art to getting it right. The batter, the secret little tricks only our Look Yays seem to know, a pan that must be extra hot (nonstick required!) and that satisfying crunch that’s somehow both delicate and bold. Look Yay took her craft seriously stacking each finished crepe with sheets of foil so none would stick together. Some people like theirs extra crispy, others prefer a softer bite, but hers were always the perfect in-between.

Served with a tray of fresh herbs and veggies and her homemade thuk trey (our family’s dipping fish sauce, known more widely as nước mắm), it was a meal that was definitely a treat!

And somehow I still can’t get my Banh Chao to not stick to the pan and break apart. 😅
